Clandestine Chocolates

“Many of the birds we see and value in the USA and Canada spend half their lives in Latin America — places that grow cacao.”  A love for nature is at the heart of Clandestine Chocolates, run by chocolatier Jonathan Doherty in New Hampshire, USA. Reflecting on when he first tasted Heirloom cacao, he shared “I found the flavor profiles so much more interesting and complex than what I had been using”, and he began using Heirloom cacao for his own creations.

Following on from his former career with the National Park Service where his mission was to protect nature and encourage people to appreciate its value, his chocolates are now a symbolic way to continue this goal, with each chocolate box coming with a leaflet about the cacao origin, flavor profiles and the birds he beautifully depicts on his chocolates. “I use Heirloom cacao from places the birds spend winter; I add flavors such as spruce tips from where they breed in the summer, and I share how they move across thousands of miles. My customers respond, many saying they read the booklet and flavor descriptions aloud before tasting a chocolate.”

We sought cacao that was well-fermented, traceable and delicious, and we chose the cacao produced by Kampura in Guatemala. Here we see farmers who care deeply about cacao genetics and flavor, as well as their environmental and social impact. These are people to be celebrated and supported, and our customers absolutely rave about the upgraded flavor of our chocolate!”

As we began our chocolate-making journey, we wanted to use cacao from the regions where we had traveled, and we created a trade connection with Heirloom cacao producers. Our background is in gardening, so we have a special interest in the preservation of Heirloom varieties of all plant species.
